“It is a myth that we get all the vitamins we need in our daily diets,” says Anthony Verlangieri, research lab director at University of Mississippi School of Pharmacy. According to nutrition expert Joel Wallach, 91 nutrients have been confirmed to be essential to human health–60 minerals, 16 vitamins, 12 amino acids and three essential fatty acids. Together, these nutrients are required daily for optimal health and longevity.

A 1992 Earth Summit report estimated that 85 percent of the nutrients were removed from the soils in North America in the 20th century due to commercial farming methods. The nutrients that do remain after harvest are likely to be destroyed due to farm production methods, shipping, storage procedures and modern food processing methods, such as canning and milling.

Processed and Fake Food Cannot Support Real Life
Chemical additive ingredient companies sell $4 billion ($4,000,000,000.00) worth of food additives per year. Did you know that there has been a 250 percent increase in brain cancer since aspartame was first introduced. Americans consume 15 billion gallons of soft drinks, 2.7 billion Krispy Kremes and 500 million Twinkies per year. The average American eats 150 pounds of sugar each year–the equivalent of over 40 teaspoons per day!

In fact, even foods that people think are healthy usually aren’t. Cow’s milk, for instance, is for baby cows, not grown men or little girls! Canned green beans don’t have any nutritional value worth mentioning. You may as well be eating your mouse pad. Bottled fruit juices aren’t much healthier than soft drinks or beer. The juices have been boiled to make a concentrate. Then sugar (usually in the form of high-fructose corn-syrup, which the body cannot metabolize), water and synthetic vitamins are added (see section below regarding synthetic vitamins.) Bananas you buy at the grocery store are huge compared to their natural counterpart. This is due to the fact that they probably contain hormones, possibly pig genes, pesticides, if they are even real bananas at all–how would we know the difference without a laboratory and a chemist at our disposal. Many produce items are genetically-engineered. What this means is that the plants and/or seeds have been modified, possibly restructured chemically, and quite possibly spliced with some type of animal genes. Ever heard the term “frankenfoods”? It sounds crazy and ridiculous, but if you don’t believe me, do some research. Why do food manufacturers do such ridiculous things to the food we eat? Maybe to make crops grow faster, produce more, stay fresh longer, look more appealing in the supermarket produce display, repel insects or maybe they just have a good time messing with people’s food, making people ill, and ripping people off. Who knows? Here’s a few examples of how common food processing methods are ripping the consumer off:

Canned Tuna
Canning tuna removes 99 percent of the vitamin A, 97 percent of vitamin B1, 86 percent of vitamin B2 and 45 percent of vitamin B3.

White Bread
When whole wheat is milled to make white bread, it loses 95 percent of the fiber, 84 percent iron, 95 percent vitamin E, 82 percent manganese, 80 percent niacin and 81 percent vitamin B2.

Why Synthetic Vitamins Are Dangerous
Cheap vitamins sold at the grocery store or drug store can actually do more harm than good. It is best to obtain nutrients from the food you eat. However, in many cases, this may be difficult for some people. If you don’t get the nutrition your body needs from somewhere, over time, you will age quicker than you’d like to, become weak, tired, frail, vulnerable and without your even knowing–disease and malfunction will be brewing inside you until one day: system failure! I’m not going to get into which supplements are better in this article, but it is important that you realize that synthetic vitamins are a bad choice. Synthetic vitamin C is ascorbic acid. About 90 percent of the ascorbic acid in the U.S. is manufactured at a New Jersey pharmaceutical plant owned by Roche. The ascorbic acid produced in this plant is derived from cornstarch, corn sugar and volatile acids, which are mixed together in a fermentation process. Most synthetic vitamin E comes from an Eastman Kodak plant where it is a byproduct of film manufacturing.

Drugs Are Not the Answer
According to New England Journal of Medicine, the American Medical Association reported 900,000 people died in one year as a result of pharmaceutical drugs. Over the past 40 years, over five million people have lost their lives due to side effects of FDA-approved pharmaceutical drugs. Drug companies are getting away with murder for profit. Why don’t people sue? Because on June 30, 2006, the FDA “final rule” regarding pharmaceutical drug liability claims took effect and consumers can no longer sue drug companies for the harm caused by any FDA-approved drug, even if the drug manufacturer intentionally misled the FDA by hiding or fabricating clinical trial data. According to Randall Fitzgerald, author of “The Hundred-Year Lie”, in 2002 the combined profits of the ten largest U.S. drug companies reached $35.9 billion, a sum higher than the combined profits of all the other 490 companies on the Fortune 500 list of largest corporations.

For more information on the genocide underway by Big Pharma, read the book “Selling Sickness”. I will end on this note: eat healthier foods, read nutrition labels, stop buying junk food and spend the extra money to buy real food, then you won’t need drugs or doctors. Once you step foot onto the prescription drug treadmill, chances are- you will never walk the same again. Give your body the nutrition it needs–it will repair itself–health is a natural state. Whether or not you choose to support it and have it is a choice only you can make. Make better choices if need be, but know that you have been given the option to live healthy.

Organic food has increased about 20 percent since 1997 in all major supermarkets. They sell everything from cereals, to dairy products, to meat, to vegetables and fruits. Organic foods are guaranteed by the USDA to be free of toxic pesticides, fertilizers, hormones, antibiotics, and modified organisms. Environmentally, organic farms are also better since they use less energy.

There is no scientific evidence to support the idea that eating organic foods is better than consuming regularly grown and produced foods. However, it does reduce the intake of potentially harmful chemicals. This fact alone impels many families’ decision to make the change.

If you have been thinking about switching to organic foods, here are several things you should take into consideration.

Reading the label

Learning to read foods labels is the most important thing. Keep in mind that not all “100% natural” meant organic.

–100 percent organic–means containing only organically produced ingredients.

–Cage-free–means animals are not kept in cages, and the USDA has no regulation on what the animals are fed or time spend outside.

–Farm fish–means fish raised in pen, and the USDA has no organic standards for seafood.

–Free range–means the animals spend at least half of their lives outside and is regulated by the USDA.

–Grass-fed–means farmers’ food sources is grass, and not regulated by USDA.

–Made with organic ingredients–means having at least 70 percent of organic ingredients.

–Natural–means no artificial ingredients, or added colors.

–Organic–has at least 95% organic ingredient.

Making the switch

It is best to make the switch to organic foods moderately, and it also helps you keeping track of your favorite ones. If you have children in the house, this schedule will make it easier for them to adjust.

–Week 1start with dairy products such as milk, cheese, and egg.

–Week 2fruits, and vegetables.

–Week 3–meat, chicken, fish, and nuts.

–Week 4–pasta, rice, and bread.

–Week 5–beverages.

The Dirty Dozen

Pesticide is reduced by 90 percent by eating these organic varieties, known as the “dirty dozen”.

–Apples

–Cherries

–Nectarines

–Peaches

–Pears

–Strawberries

–Grapes

–Red raspberries

–Celery

–Bell peppers

–Potatoes

–Spinach

Where to find organic foods

There are several sites online where you can look for organic foods. You can find the list under the “Resources” section.

Switching to organic foods take times, persistent, and commitment. Also, check out your local health food stores, farm stands, and supermarkets. The cost for organic food is a bit higher than conventionally grown and produced foods, but they reduced the potentially harmful chemicals. Keeping your family’s diet natural and free of unhealthy ingredients is worth the switch.

Yacon is a product grown in South America in Andean countries like Peru being used around the world by diabetics, people managing blood sugar-related conditions, and anyone who needs a sugar substitute.

It’s been reported by Peruvians and others who have used it for many years to help avoid constipation, keep glucose and cholesterol levels at a normal range, promote healthy bacteria development as a pre-biotic (bifido bacteria and lacto-bacilus) that stimulates the immune system, improve calcium assimilation preventing osteoporosis, and support diabetics and weight watchers with it’s minimal impact on blood sugar levels.

The root is reported to taste like a cross between an apple and watermelon, and is crisp and sweet. It’s available by import and is beginning to show up on the shelves in some health food stores in the U.S., though I found it hard to find in the Lower Hudson Valley, NY and Northern, NJ areas where I live. I traveled around or called five health food stores, and only two had the product. Both were sold out. The syrups I’ve used had a molasses consistency, and I feel it has it’s own unique flavor.

Yacon is sold in a number of different forms to suit people’s preferences: honey, syrup, dried slices, powdered, raw extract, marmalade, jelly, juice, tea, and capsules. It can be used in any way you would normally use sugar products that are unhealthy for you. I first discovered it in a village in Peru called Ollantaytambo three years ago. A small shop sold it as “Miel de Yacon” (Yacon’s Honey) in 250 grams in a jar. I fell in love with it for the taste, and the health benefits. I don’t have diabetes but it runs on both sides of my family. You know what they say: an ounce of prevention is worth a pound of cure.

The yacon is unique because it’s carbohydrates are stored as inulin and oligofructanes (FOS) a polymer mainly composed of fructose and glucose. Most other tubers and roots store carbohydrates as starch. The sugar it produces is not absorbed by the body–not assimilated or digested in the intestine, and it has only one-fourth the calories in regular sugar. It’s considered a Low Glycemic Index food.

Some of the nutritional components are minerals like potassium, iron, magnesium, sodium, calcium and copper; and high vitamin contents such as thiamine (B1), riboflavin (B2), and niacin (B6).

The only issue I have with the product is the high cost for it that does not make it accessible to everyone who needs it. I’ve purchased two sizes of the syrup here in the United States: one onliine (12 ounces, $23.95, plus shipping) and one in a store (6.6 ounces, $8.00).

Here is a list of some web sites that sell yacon products. You can compare prices.
